The chosen cabernet sauvignon comes from mature, low yielding vineyards in the cooler sub-region of Mount Barker in Western Australia — noted for deeply coloured and highly distinctive cabernet. This fruit is gently harvested and crushed, open fermented and matured in a combination of new and old French oak barriques for 15 months. The result is a complex – yet lush – cabernet; showing true regional style, weight, texture and long, dusty tannins.

NOSE:

A captivating bouquet unfolds, presenting a complex interplay of aromas. Rich blackcurrant and blackberry notes dominate, followed by whispers of mulberry, mahogany, and hints of big Cuban cigar. A gentle touch of bay leaf adds a touch of herbal intrigue.

PALATE:

Prepare for a full-bodied experience. Initial bursts of cassis, blackberry, and mulberry flood the palate, showcasing the ripe fruit character. These are joined by rich coffee mocha notes, adding further depth and complexity.

FINISH:

Long and lingering, leaving you with a delightful memory of juicy dark fruit, mocha, and a hint of earthy spice.

The 2017 Reverend V Cabernet Sauvignon demonstrates how a cooler sub-climate can produce outstanding fruit. Deep and brooding purple in colour, this Cabernet exhibits all the regional characters of Mount Barker, crunchy cassis perfume and cedar notes follow onto the palate of rich ripe berries. Generous weight and texture support the palate whilst the balance of oak and tannin provided exceptional length from start to finish. This Cabernet can be cellared for up to ten years – or if patience fails, drink with roasted or grilled red meats with all the trimmings, or mature cheeses.
