The most extraordinary Cabernet Sauvignon produced in Australia, it possesses superb creme de cassis and black fruit characteristics interwoven with notions of graphite, minerals, spice box, cedar, and mint. Anticipated maturity: 2010-2025. If I had to select the number one Australian winery, it would be hard not to choose the Greenock Creek Winery, run by the humble, shy Michael and Annabelle Waugh.
