Lenght of aging: The use of fermentation temperatures close to 17°/18° retard the depletion of sugars to mid to late October. The lees generated in fermentation are maintained in suspension with the specific task to soften the taste and perfectly integrate acidity.
Clarification and filtration: a clarifying treatment with bentonite is used to lower the of the loads of
turbidity due to protein oxidation, which do not fit a white wine ready to drink. The filtering used only aims to impeed the malolactic degradation.

About Cascina Bongiovanni
Azienda Agricola Bongiovanni is a family-run company founded in 1950 by Giovanni Bongiovanni, grandfather of the current owner, Davide Mozzone. In 1950, when Nebbiolo was planted it struck gold, yet at that time the wines were sold to other wineries. Today, the vineyard management and winery technology is avant-garde, albeit respectful of tradition and terroir. The Bongiovanni philosophy aims at minimizing outside intervention and maximizing character and goût du terroir, steering clear of stereotyped wines. Hugely concentrated, luscious, muscly and full-bodied reds have reaped unanimous accolades.
